Quick/simple vegan lunch idea ππΏ - base of spinach: layer with @traderjoeslist microwaveable organic brown rice pack (life saver), fresh chopped veggies (I used tomatoes, cucumbers, and carrots), roasted chickpeas (bake for 30 minutes at 350 degrees), hummus + spices/herbs of your choice (I used sea salt and cilantro).
