This morning (3pm totally counts as morning on Sundays 🙈) I decided to treat myself to some healthy carbs after gym! This is relatively calorific just because I used two bananas. You may eliminate them from the recipe, it shouldn’t affect the consistency much but you may want to add some extra sweetener into your batter. Fancy a dip for those yummy pancakes?  I would suggest mixing greek yoghurt with cinnamon-this makes an excellent, fresh and high protein dip. If you eliminate bananas from the recipe, you may add greek yoghurt into the batter to keep the pancakes moist 😊. 

So here’s my protein pancake recipe:

You will need:
1. ½ cup of oat flour
2. 2 free range eggs (1 whole, 1 egg white) 🐔
3. 2 organic fair-trade bananas 🍌
4. Semi-skimmed milk 🍼
5. 1 scoop of whey protein powder ( I used Gold Standard peanut butter flavour)
6. Dark chocolate ( I used 80%)
7. Berries galore 🍓
8. Coconut oil

Directions:

Literally this is the easiest recipe ever!
In one bowl, mix the dry ingredients. Mix the eggs, 1 mashed banana, milk and a tsp. of coconut oil in another bowl. Pour the wet ingredients into the bowl with oat flour and protein, mix until smooth (relatively smooth as there will be some lumps of banana present). Add chopped chocolate and voila.

Pre-heat a small pan with a tsp. of coconut oil and then lower the heat. Pour your pancake batter according to how big you want your pancakes.

To top everything off, I decided to grill the remaining banana with a pinch of nutmeg under a grill to make it sweet and mushy! 🙌🏻🙌🏻 Then I used that goodness as well as blackberries and blueberries as toppings… mmmmm yummy 👅 🍽
